Hundreds of years ago, coffee beans were transported by wooden cargo hold from India and Africa to England often taking 6 months to arrive.  These damp musty conditions resulted in a sweet fermented coffee that was both earthy and balanced.  Monsooning is a process utilizing the monsoon rains taking 16 weeks, aimed at recreating those conditions.
